Cierra's 11th birthday cake
My niece Cierra is lactose intolerant, so I offered to make her a dairy-free cake for her 11th birthday. I used Martha Stewart's One Bowl Chocolate cake recipe, an oil-based cake and my old standby, substituting coconut and soy milks for the milk called for. I made a tofu-based mousse from the Real Foods Daily cookbook to go in between the four cake layers, and a chocolate buttercream made with one part each palm oil, earth balance buttery spread, and coconut oil. Each componant turned out great, and the cake turned out as rich, chocolatey and not-weird as I had hoped!
