Vegetarian Turkey- the filling
I recently read Fran Gage's book Bread and Chocolate, which I highly reccomend. She includes a chapter on the dilemma of what to feed vegetarians on Thanksgiving after all her children suddenly went veg in their college years. Wanting to serve something really spectacular, she eschews tofurky for a grand Timpano based on the climactic final course in the film Big Night. Unable to find a recipe, she and her husband attempt to recreate one based on the montage in the film. Hand-made puff pastry is fitted into a large metal bowl; pasta is layered with bechemel, chestnuts, mushrooms, herbs and vegetables, then the whole contraption is baked in the bowl.
